Tacu tacu

Idag säger miljontals peruaner ”¡Te amo Perú!” för det är 28:e juli och Perus nationaldag! Dagen firas eftersom 28:e juli 1821 erkändes Peru självständigt från Spanien. 

För att fira äter många ceviche, tunt skivad marinerad fisk, aji de gallina, gryta med höns, Suspiro de limeña, en trifle med dulce de leche. Jag valde att göra tacu tacu!

Tacu tacu är en peruviansk rätt med en stekt blandning av kokt ris och bönor, chili, toppad med stekt ägg och vanligtvis serverad med stekt banan, stark sås och aderezo. Själva tacu taxin är den runda kakan och är extremt yummielicious ensam. Jag använde mungbönor eftersom jag precis hade kokat dem själv, men bruna linser, gröna ärtor och cannellinibönor funkar också.

Tacu tacu
(Jag fick 2 portioner)

Ingredienser:
Originalt:
300 g long-grain white rice
1 plantain
2 cloves of garlic
1 onion
1 fresh red chilli
1 x 400 g tin of haricot beans
olive oil
hot chilli sauce
4 large free-range eggs

Mitt recept:
1/2 gul lök
2 vitlöksklyftor
Olivolja
1 tsk salt
1 tsk malen chilipulver 

Garnering:
Olivolja
2 ägg
Malen chilipulver 

Instruktioner:
  1. This dish (which can easily be meal in itself) is often served with steak or seafood. It’s awesome straight up, too, with crisp plantain and extra hot chilli sauce for a kickin’ hangover breakfast.
  2. Cook the rice according to packet instructions, then drain and cool.
  3. Peel and slice the plantain about 1.5cm thick. Peel and finely chop the garlic and onion, then finely slice the chilli. Drain the beans.
  4. Add a couple of good lugs of oil to a large non-stick frying pan over a medium heat and fry the plantain for a few minutes on each side, or until golden and crisp. Set aside and keep warm.
  5. Return the pan, with any leftover oil, to the heat. Fry the garlic, onion and chilli over a medium-low heat for 5 to 10 minutes, or until softened and lightly golden.
  6. Stir in 1 tablespoon of hot chilli sauce, the beans and cooled rice.
  7. Turn the heat up to high and fry the mixture until the rice is piping hot and beginning to crisp up, stirring regularly. Stop stirring for the last couple of minutes to let it get golden and crisp on the bottom – this is your tacu tacu! Transfer to a plate and set aside.
  8. Add a little more oil to the same pan and place over a medium heat. Fry the eggs, adding the plantain for the last minute to warm through.
  9. Divide the tacu tacu among your plates, making sure everyone gets some of that lovely crispy bottom, and top each portion with a fried egg, some crispy plantain and an extra dash of chilli sauce, if you like.


Mina instruktioner:
Skala och finhacka lök och vitlök. Värm en spisplatta på låg värme. Häll olivolja, lök och vitlök i en djup stekpanna och fräs i 5 minuter. Ta bort stekpannan. Höj värmen till hög. Skölj bönorna i en sil. Tillsätt mer olivolja, bönor, quinoa, salt och chilipulver. Stek och rör om konstant i 3 minuter. Stäng av värmen. Fördela tacu tacun på två tallrikar och forma till runda kakor. Diska stekpannan. Värm en spisplatta på medelvärme. Häll i lite olja och stek äggen 4-5 minuter. Lägg på ägg på tacu tacu. Strö över chilipulver. Servera varmt.

Förvaring: Täck med aluminiumfolie och förvara i kylen.
